Fall is in the air so what better add-in than the combination of pumpkin and pumpkin pie spice!

Pumpkin Pancakes with Cinnamon Spice

Yield: 6 pancakes

Pumpkin Pancakes with Cinnamon Spice

Get ready for fall with these pumpkin pancakes topped with yogurt. Enjoy delicious pancakes anytime with the convenience of homemade freezer meal pancakes. Simply batch cook. Freeze. And reheat. Gluten free.

Ingredients

  • 1 cup dry pancake mix (I used About Time Cinnamon Spice)
  • 1/2 cup cold water
  • 1 teaspoon pumpkin pie spice
  • 1/2 cup pure pumpkin puree
  • 6 ounces plain or vanilla yogurt
  • 1 scoop protein powder (I used Skoop B-Strong)

Instructions

  1. Mix 1 cup dry pancake mix, water, pumpkin pie spice and pumpkin in a bowl until well blended.
  2. Heat the griddle to 350 degrees.
  3. Pour the batter about 1/4 cup per pancake.
  4. Cook until bubbles stop forming and edges are cooked. About 2 minutes per side.
  5. While pancakes cook, mix combine the yogurt and protein powder and mix well.
  6. Remove pancakes from the griddle.
  7. Layer 2-3 pancakes (depending on size) with the protein yogurt.
  8. Sprinkle with pumpkin pie spice.
  9. Serve immediately.

Notes

The About Time pancake mix adds the perfect amount of sweetness and the cinnamon spice flavor. If you're using a different pancake mix you will need to add the sweetener of your choice and cinnamon.

Freezing and reheating pancakes:

  1. Cool the pancakes completely and arrange them in a single layer on a parchment-lined baking sheet.
  2. Place in the freezer and freeze at least 3 hours.
  3. Stack pancakes and seal tightly in a freezer bag (or container).
  4. To reheat using the microwave, arrange two pancakes in a stack on a microwave-safe plate. Heat on ‘High’ for approximately 70 seconds. Microwave ovens vary so check the temperature to avoid overheating.
  5. You can also reheat the pancakes in an oven. Pre heat the oven to 375. Arrange the pancakes in a single layer on a baking sheet and cover tightly with foil. Bake for 14 to 16 minutes.
